Are there direct flights from Calgary to the Middle East?

Dubai has anchored direct long-haul service from YYC, which makes it the natural gateway to the wider region. Doha, Abu Dhabi, Riyadh, and Jeddah are typically reached with one connection, frequently through Dubai or a European hub.

Can I stop over in Dubai on the way to India or Pakistan?

Often at no extra airfare. Gulf carriers routing through Dubai and Abu Dhabi commonly permit the journey to be broken for several days without increasing the fare. Ask when booking, because it is considerably harder to add afterwards.
